This is my take from a Green Goddess Dressing I found in my ‘Still Life With Menu Cookbook’, a Moosewood cookbook. Both the original and my version is full of fresh herbs pureed with good oils and other healthy ingredients.

Because of the types of fats used, it will solidify in the refrigerator. Those who have taken my Restart® 5-week sugar detox (beginning Sept 12th & 13th!) know that fats classified as saturated (coconut oil) and polyunsaturated (avocado and olive oils) take on a solid form when chilled. To liquify, simply soak the bottle in a bowl of hot water for about 10+ minutes.

If you’re not a fan of mayonnaise, you can try substituting one small avocado (1/2 cup) with an additional 1/4 cup olive oil. But — I highly encourage you to try the brands mentioned below! As seen in the picture, the Chosen Foods brand is filled with healthy coconut oil and other supportive ingredients for your body which have many benefits as I teach the during week #4 in my Restart® class. Just a few tablespoons adds a nice creamy consistency to any dressing, which just takes a few tablespoons.


3 cups fresh cilantro, rinsed and dried

1/4 cup mayonnaise, Chosen Foods (coconut oil-based) or Primal Kitchen (avocado oil-based) brand

1/4 cup extra-virgin olive oil

1 1/2 tablespoons raw apple cider vinegar

2 teaspoons paprika

2 scallions, chopped


Puree all ingredients in a blender until smooth. This recipe can be used as a salad dressing or dip. Enjoy!


Add 1 cup or more sautéed, cooled zucchini or other vegetables to bulk it up and use as ahearty dip…delicious!
